Toor Dal Khichdi Recipe Restaurant Style | Gujarati Toor Dal Khichdi | How To Make Toor Dal Khichdi
- 1 cup Rice (chawal) (washed and soaked)
- 3/4 cup Pigeon Pea (toor dal) (washed and soaked)
- 1 tsp Turmeric Powder
- Salt as per taste
- 5 cup Water
For First Tempering
- 1 tbsp Oil (tel)
- 1/4 tsp Asafoetida (hing)
- 1 tbsp Ginger And Garlic (crushed adark & lahsun)
- 1 tbsp Green Chilies (finely chopped hari mirch)
- 1 piece Large Onions (finely chopped pyaaj)
- 1 piece Tomato (finely chopped tamatar)
- 1 tsp Cumin Seeds (jeera)
- 1 tsp Red Chili Powder (lal mirch)
- 1 tsp Coriander Powder (dhaniya powder)
- Salt as per taste if required
For Second Tempering
- 2 tbsp Ghee
- 1 tsp Cumin Seeds
- 3 piece Dried Red Chilies
- 8 piece Curry Leaves
- 2 tbsp Coriander Leaves
- Rinse the basmati rice and toor dal with water thoroughly. Soak the rice and dal in warm water for 20-25 minutes.
- In a pressure cooker add water; bring it to boil.
- Add the washed and soaked rice and dal, turmeric powder, and salt as per taste and cook it until 4 whistles.
- In a large sauté pan, heat a tablespoon of oil, add cumin seeds, let it splutter, and now add asafetida.
- Add finely chopped green chilies, onions statue it for a minute or two until onions turn translucent.
- Add crushed ginger garlic paste and cook for another 40- 45 seconds.
- Add red chili powder and coriander powder, salt if required; cook it for half a minute or so.
- Add tomatoes, cook until tomatoes are mushy.
- Whisk the cooked dal and rice nicely and add water to it to adjust consistency if required.
- Transfer the boiled dal and rice to the tempering which we have prepared in a saute pan and cook until it starts bubbling while stirring it occasionally.
- For the final tempering, in a tempering vessel add ghee, once the ghee melts, add dried red chilies, cumin seeds, curry leaves, and coriander leaves.
- Once tempering splutters, pour it on top of the khichdi, and give it a nice stir and garnish it with some freshly chopped coriander.
